MEE SOTO

 MEE SOTO

Missed eating this, so I went online to look for a simple recipe that I could do. Turned out way better than I expected! The begedil was made according to my previous begedil recipe, but this time there's no pork inside and instead of bread crumbs, I coated it in flour, dipped it in egg and fried it. It's not that difficult to make this, and it tastes great!

Ingredients

A piece of chicken thigh and drumstick

2 big onions

5 small onions

5 cloves of garlic

1 piece of ginger (about 4cm)

1 tablespoon tumeric powder

1 tablespoon fennel powder

1 tablespoon corriander powder

1 tablespoon cumin powder

A 7cm piece of lemongrass

1 cinnamon stick

1 teaspoon of cloves

3 star anise

5 tablespoons coconut milk

1 chilli

A bunch of parsley

2 tablespoons kicap manis

1 teaspoon lime juice

Some tang hoon

Some oil

Egg noodles

1 hard boiled egg

5 tablespoons coconut milk

Water

Salt to taste

Method

Roughly chop 4 cloves of garlic, the big onions, lemongrass, ginger and put it into the blender with corriander powder, tumeric powder, fennel and cumin powder. Add some oil and blitz it into a fine paste

Peel and slice the small onions, sautee them till golden brown, put it aside

Fry the tang hoon in hot oil and put it aside

In a pot with a little oil, sautee the cinnamon stick, star anise and cloves till aromatic

Add the spice paste and sautee till fragrant

Put in the chicken, fry it till it browns slightly and pour enough water for 3 bowls of soup and all the coconut milk

Let it boil for about 30mins

Now chop up a clove of garlic, chilli and parsley. Put it in a small brown and mix with kicap manis and a teaspoon of lime juice

After 30mins take out the chicken and cut it into small shreds....

Now to assemble the dish....

Cook the egg noodles for about 2 mins and put it in a bowl

Cook the bean sprouts and put it into the bowl

Pour enough soup to cover the noodles and bean sprouts

Put a portion of hard boiled egg, shredded chicken, fried tang hoon, begedil, parsley and fried onions and you have a bowl of mee soto! Serve with the sauce u made earlier on the side

This was our dinner..... And it was really good too! Dead spot on for a first try! Try making it! It's not that difficult!

Enjoy everyone, take care and stay safe!
