SINGAPORE BAK KUT TEH
When I miss home, I cook stuff that I can't get here. This is one of them. Just 4 main ingredients. Add water, boil it till the meat almost fall off the bone and it's done. Serve it with a bowl of rice, cut chilli and dark soy sauce and you have a fantastic meal! And on a cold day? You'll be in heaven if u have that on the table!
Ingredients
500g pork ribs
3 whole garlic
1 tablespoon whole white pepper
1 tablespoon chicken stock
Method
Blanch the pork ribs in hot water till the color turns and remove the ribs
In a hot pot with a little oil, cook the garlic till it's just a little burnt
Add the pepper into the pot and let it cook till aromatic
Put the ribs in the pot, add 3 big bowls of water and let it boil for about 2hrs, adding water when necessary
After 2hrs, you should have about enough water in the pot for a full bowl of soup for 2
Pick the ribs out of the pot and put it in a bowl
Pour the remaining liquid into the bowl with the ribs, leaving the garlic and pepper in the pot
Garnish with corriander leaves and u have an excellent bowl of Bak Kut Teh!
A steaming hot bowl of rice makes an excellent accompaniment to this, and to take it to another level, put some cut chillies in some dark soy sauce, mix it, pour a little into the rice and drizzle some pork lard on top....... Man! You'll never get a better combo for Bak Kut Teh than this!
