 SALTED EGG YOLK FRIED MEE HOON 



This is for all the salted egg yolk lovers out there. How often can u go out for salted egg yolk crabs, especially during this pandemic? Now u can get your salted egg yolk cravings at home, for breakfast, lunch or dinner! I used salted egg yolk powder, but u can use salted egg yolks, steam them and then mash them before frying. 


Ingredients 



Mee hoon, soaked 

3 cloves of garlic, minced 

2 chilli padi, finely cut 

Some fishcake slices 

Some prawns 

Some bean sprouts 

Some spring onions 

Some curry leaves

1 tablespoon fish sauce 

3 salted egg yolks, steamed and mashed 

4 tablespoons butter 

A little sugar to taste 


Method 



In a hot wok add some oil and sautee the garlic, chilli, prawns and fishcake 



Add the mee hoon and fish sauce and let it cook in high heat for about a minute, then remove it into a plate 




Melt the butter and saute the curry leaves till aromatic 

Now, on low heat, add in the salted egg yolk. When it's totally bubbling, put in the mee hoon, bean sprouts sugar and spring onions, mix them so the salted yolk covers everything and it's ready to serve 



After eating this, I was in salted egg yolk heaven! For those who like salted egg, this will really hit the spot!
