PINEAPPLE FRIED RICE

 PINEAPPLE FRIED RICE




This is one of those things I simply love! Never fail to order this when I'm at a Thai restaurant! They normally served this with chicken or prawns but since I had peeled crab meat and Chinese sausage, why not? Here's what u need and how it's done.....




Ingredients 


Cooked rice for 1

1 teaspoon curry powder 

Half teaspoon tumeric powder 

1 tablespoon fish sauce 

2 teaspoons light soy sauce

Half a teaspoon shrimp paste 

250g peeled crab 

150g pineapples, cut into cubes 

One Chinese sausage, cut into cubes 

3 shallots, finely sliced 

3 cloves garlic, minced 

100g cashew nuts, fried 

2 eggs 

Spring onions, chopped 

Corriander leaves, chopped 


Method 


Mix the egg with the rice, curry powder, tumeric powder, shrimp paste, fish sauce and soy sauce. This is the time to separate the rice grains and mix all those ingredients well.



In a hot pan, sautee the onions, garlic and Chinese sausage 




When it gets aromatic, add the rice mixture and fry till tye egg is cooked. 




Add the pineapple cubes and crabmeat, toss it around the wok for a minute or two, add the spring onions, corriander leaves and cashew nuts and it's ready to plate. 




Garnish with fried onions, cashew nuts, corriander leaves and it's ready to serve!




Since we were in the mood for Thai I made some stir fried mince pork with basil to go along with this. So that's it! A simple Thai dinner for two!
