YAM CAKE
After cleaning it up, I managed to get 200g of yam cubes and since I've not eaten yam cake for a very long time, I tried to make some and boy, it tasted really good! Easy to make too! This is how it's done......
Ingredients
200g yam, cubed to identical size
200g rice flour
50g wheat flour
2 tablespoons chicken stock
1 chinese sausage, diced
3 shitake mushrooms, diced
7 heaped tablespoons dried shrimp, soaked and cut to small pieces
2 tablespoons chicken stock
500g shallots, sliced and fried till crispy
Spring onions, chopped
Water
Method
Cook the chinese sausage till it's done, set aside
Fry the dried shrimp till crispy, set aside
Mix the flour with the water used to soak the dried shrimp till it becomes the consistancy of a runny batter. It's ok to add plain water if u don't have enough water
Add the chicken stock to the batter
In a wok, add some oil used to fry the shallots and cook the mushrooms and yam
Cook till the yam is soft. If the wok gets too dry, u can add a little more water
When the yam is soft, pour the batter in the wok. It gets from liquid to paste really quick, so keep stirring till it becomes a paste
When it gets to look like the above picture, turn off the heat
Grease a pan with the onion oil and pour the paste in. Grease a spatula and spread the paste to an even level
Put it in a pot and steam for about 40mins
When the 40mins is up, take it out and let it sit to cool for 30mins
Put a plate over the pan and turn it upside down. The yam cake should just fall out of the pan
Now garnish it with the remainder of the dried prawns, chinese sausage, spring onions and fried shallors and it's ready to be served
Just look at that! That, right there is almost the best yam cake I've ever eaten! No sauce needed, it's good to go on it's own! Even though I've eaten most of it, seeing it agin makes me drool! Its quite simple to make, so try it! You just might not buy another yam cake after this again!
