SINGAPORE PRAWN NOODLES
Because of this damm covid, I can't go back for this, so after lots of trial and errors, mostly errors, I finally got what I wanted..... The soup is richer than the one at beach road prawn noodles because of all the prawn heads I used..... It's a small amount, but I'm only making for 2, so it's way more than enuf.... These are what u need........
Ingredients
Yellow noodles
Bee hoon
30 prawn heads
1 whole garlic
4 pcs pork ribs
About 40g pork belly
Half an ikan bilis cube
Soy sauce, fish sauce, pepper and rock sugar to taste
6 big prawns
Some bean sprouts
Some kangkong
Pork fat
Sliced onions
Chilli powder
Method
Render all the oil out of the pork fat till they become those little crispy delights
Use the oil to fry the onions till it becomes golden brown, then drain the oil and put it aside
Heat up some of that oil in a pot and put in the prawn heads, cook them till all the juices come out and using a potato masher, mash the shells up..... This is to release all the flavours from those heads!
Put in the garlic, add enough water for 3 bowls of noodles and let it simmer
Blanch the pork ribs and belly in hot water for 2 mins, drain it and add the meat into the prawn stock
After 30 mins of simmering, add small amounts rock sugar, pepper, ikan bilis cube, soy and fish sauces, leaving it to simmer for another 30mins. Don't worry if it's too little as u can add more later
By the time the 30mins are up, taste the soup.... This is the time to add whatever is lacking.... In my case, it was the soy sauce
So after a total of 2hrs of simmering, the pork will be fall off the bone tender. Now sieve out everything, leaving my that fantastic soup in the pot and separate the pork ribs and belly from the prawn shells and garlic
Now it's time to cook the prawns. Put them in the soup and let it cook till it looks like a chinaman's face after having too much alcohol..... But not too long, as there's nothing worse than overcooked prawns
Put the prawns with the pork, and now you're ready to do the noodles
Put one portion of instant bee hoon in boiling water for 2 minutes, remove it and put it in two bowls
Do the same thing to the yellow noodles
Blanch the bean sprouts and kangkong, and separate them into the two bowls
Dress the bowls with the prawns and pork, pour the soup over it and garnish with the fried onions, pork fat and chilli powder.
