PANCAKES AND BERRIES
I love pancakes! But most of the commercial ones are either too sweet or tasteless without the syrup. What I have here is one that is not too sweet and a little savoury. The pancakes are still soft and fluffy, without the taste of baking soda,
Pancakes are generally full of sugar and fat, but in trying to make a slightly healthier alternative, I used organic brown sugar, free range chicken eggs, less than half the usual amount of baking powder and fresh whole milk. The butter used was freshly made by a friend and the berries, although frozen, adds vitamins into what would usually be just carbohydrates and sugar. By no means this pancake has suddenly become a healthy food, buy the aim is to make it not so unhealthy, These are what u need and how it's done........
Ingredients
1 cup flour
1 cup warm milk
1 teaspoon vanilla essence
1 teaspoon baking powder
1 egg
2 tablespoons brown sugar
2 tablespoons melted butter
More butter for the pan
1 part cinnamon powder
1 part icing sugar
Some blueberries
Some strawberries, cut into 6 pieces
Method
Mix the wet ingredients together
Mix all the dry ingredients together
Mix the cinnamon powder and icing sugar
Get a pan on low heat ready
Mix the wet and dry ingredients to get the batter
Put some butter in the pan and pour some of the pancake mix into it
Now is the time to put in the berries. The reason I'm doing this at this point is that I don't want the co;our of the berries to change the colour of the batter if I put it in the batter earlier
When bubbles start to form on top of the pancake, it's time to flip it
When the pancake looks like this, it's ready to be plated
Put a thin slice of butter on the pancake and sprinkle some cinnamon sugar on it before stacking another one on top. Repeat until the batter is finished. This batter is good for 6 pancakes
Come on man! Just look at those pancakes! Nice, fluffy, soft, this is really some excellent stuff! It looks a little darker than usual because of the brown sugar, but still, it's a damm good and slightly healthier pancake! A good breakfast for two! Enjoy, and stay safe!
