Now, this, ladies and gents, is comfort food for me! It's my go to breakfast daily whenever I'm in town. Have been eating this from the same stalls since I was a kid, so much so that all I need to do is lift a finger and they know what I want. This is the Singapore Mee Pok! Flat egg noodles, dressed with fish sauce, soy sauce, rice vinegar pork lard  and a specially prepared chilli sauce, this is something I can happily have, 3 times a day, 365 days a year! Unfortunately, this is only common in Singapore, and difficult to find anywhere else in the world, so if u want to eat this and it's not available near you, here's how it's done.......


Ingredients

Mee pok

100g minced pork

Some fishballs

Some fish cake slices

Some fish skin wantans

Some crispy pork fat

2 tablespoons pork lard

2 teaspoons sesame oil

2 teaspoons oyster sayce

2 teaspoons fish sauce

2 teaspoons soy sauce

1 tablespoon of any bottled prawn sambal

2 teaspoons rice vinegar

Some spring onions and corriander leaves

Method

Marinade the minced pork with oyster sauce and sesame seed oil and put it aside

On a plate, mix the sambal, vinegar, pork lard, soy and fish sauce

In a pot of boiling water, cook the mee pok for about 45secs, take it out, wash it down with cool water to get rid of the starch, put it back in the hot water for 10secs and then put it on the plate, mixing it with the sauce

Now boil all the ingredients except the  greens and mince pork till it's cooked, then put it on the noodles

The minced pork cooks really quick, so make sure u don't over cook it and when it's done, plate it, garnish with the greens and crispy pork fat and it's done!

While this is not exactly similar to those I had at Marine Terrace, it's pretty close considering it's made at home! Now, time to enjoy this! Stay safe!
