HONG KONG STYLE WANTAN MEE SOUP
Was blown away by this when I visited Hong Kong, and before they started opening branches of the popular stalls of Hong Kong style wanton noodles here, this is what i do to solve the cravings. U can get away without using pork bones for the stock if you're making just one portion by using the water that u boil the wantans with as part of the soup. It will taste almost just as good because of the number of wantans I make for one bowl of noodles.
Ingredients
200g minced pork
100g prawns, peeled and cut to small pieces
2 teaspoons oyster sauce
2 teaspoons sesame oil
1 teaspoon light soy sauce
3 teaspoons dried flounder powder
Wantan skins
1 portion wantan noodles
enough water for a bowl of soup
Fried shallots
Crispy pork lard
Spring onions
Method
Cook the noodles for 45secs, wash them down with cool water and put it in a bowl. Washing them down with cool water removes the starch so the noodles do not stick together
Season the minced pork and prawns with oyster sauce, sesame seed oil and 1 teaspoon dried flounder powder
Fill a pot with just enough water for a bowl of soup and bring it to a boil
Add the remaining flounder powder and soy sauce
Make the wantans and cook in with the soup.When the skins turn translucent and the wantan starts to float, it's done
Pour the soup and wantans into the bowl of noodles, garnish with fried shallots, crispy pork lard and spring onions and it's ready to serve
There! a nice hot bowl of Hong Kong style wantan noodle soup!
