HAKKA MEE
Man! this is so easy to make, even my wife is capable of making this! My first encounter with hakka mee was in an open parking lot at night in Seramban. The place, a parking lot by day, was transformed to a makeshift hawker centre at night. I wanted something plain and simple, and was blown away by the taste in spite of it's simplicity! It was just minced pork with noodles but never have I ever had something that looked so plain but tasted so good!
The next time I had this was in a more luxurous setting. I was at The Gardens and walked into Ying Ker Lou and wanted something light. I tried the hakka noodles there and enjoyed it so much I ordered seconds! :-p Now u can find it in almost every coffeeshop! I managed to get the proper hakka noodles at the chilled section of the supermarket. Some substitute it with air dried instant noodles, but since the real thing is available, why not?
Ingredients
1 portion Hakka mee
Pork lard
200g minced pork
1 tablespoon minced garlic
Light soy sauce
Fish sauce
Crispy pork fat
Spring onions
Sliced chillies
Method
In a hot pan add some pork oil, sautee the garlic
Add the minced pork, 1 teaspoon light sou sauce, fish sauce and 3 tablespoons water
Cook till the mince pork separates then put it aside
In a pot of boiling water, cook the noodles for a minute. Remove the noodleswash it in cook water to remove excess starch and put it in the pot for another 10secs, then plate it
Dress the noodles with 2 teaspoons of light soy sauce and fish sauce, put the minced pork on top and garnish with crispy pork fat, spring onions and sliced chillies
Just look at that! Nice springy, tasty noodles! How can u not want that! So easy to make and unbelieveably tasty! Try it! No regrets, that's for sure!
