GEYLANG LORONG 9 BEEF KWAY TEOW
This is one of those things my dad and I love to eat. Sometimes we'll go there to eat, and waht a treat it was!Over the years the standard has dropped, and this is my take on the popular Geylang Lorong 9 beef kway teow
Ingredients
1 portion kway teow
1 portion beef slices
A quarter big onion
2.5cm ginger, sliced
1 tablespoon minced garlic
1 tablespoon black bean paste
Corn flour
Oyster sauce
Dark soy sauce
Chinese rice wine
Light soy sauce
1 teaspoon sugar
1 teaspoon sesame seed oil
water
Method
Use the most tender cut of beef u can get, slice it and marinade with 1 teaspoon light soy sauce, oyster sauce, sesame seed oil and chinese wine
Mix the kway teow with 1 teaspoon of dark soy sauce and sesame seed oil
In a smoking hot wok add some oil and fry the kway teow till it's slightly charred, and then plate it
Now in that same hot pan, cook the beef till it's half done and put it aside
In that same wok, put some oil and fry the ginger and onions till aromatic
Add minced garlic, black bean paste, 1 teaspoon sugar, 1 teaspoon light soy sauce,2 teaspoons oyster sauce, 1 teaspoon dark soy sauce and 1 cup of water and bring it to a boil
Use 2 teaspoons of corn starch, mix it with a little water till there are no lumps and pour it in to thicken the gravy
Once the gravy thickens, pour it over the beef and kway teow and it's ready to serve
I usually use oil that I render from beef fat for this as it gives the dish a better beef flavour. You can use any kind of oil if u don't have beef oil. I also use the best beef cuts i can get because i don't like the texture of beef tenderized by baking soda
