How to cook the perfect fried rice.........
Here are some tips on how to make the perfect fried rice with just eggs, rice, garlic and spring onions! U can add whatever proteins u want to this and it will taste just as good as what u get from the neighborhood tai chow! The ingredients and methods are as follows.......


 

Ingredients
Overnight cooked rice for one
2 eggs
Minced garlic
Finely chopped spring onions
2 teaspoons Oyster sauce
2 teaspoons Fish sauce
2 teaspoons Soy sauce
Oil
Method
Beat the eggs. I mean, really beat the eggs up! We want the rice to look yellow, so the egg whites must be totally mixed into the yolk
Mix all the sauces into the rice
Mix the eggs into the rice. It will look like that there's more eggs than rice but it doesn't matter once the eggs are cooked
In a hot wok add some oil and fry the garlic till fragrant
Add in the egg and rice mixture and fry it till the eggs are cooked and the rice are separated into individual grains. Keep the wok as hot as your home stove allows. This might take some time but believe me, it's worth it!
Once the rice is properly done, add the spring onions, give it a good mix and it's ready to serve
I garnish it with fried shallots and pork lard to give it the extra kick!
You can add prawns, chicken slices, pork slices, luncheon meat, the list of items that can be added is only limited to your likes!
I mixed the eggs and sauces with the rice before I put it in the wok so that everything is properly mixed, no spots of super salty rice or tasteless rice when u do it this way. The eggs too, will be thoroughly mixed with the rice, so u get almost equal amounts of eggs and rice in every spoonful
