DRY FRIED BEEF HOR FUN
This beef hor fun is commonly found in most Hong Kong style char chan teng. They usually use a cheap cut of beef and tenderize it with baking soda. But since I'm doing this at home, I'm using a good cut of beef without any baking soda. The beef is still tender, without the chemical taste of baking soda. I usually add the sauces to the kuay teow before it enters the wok. This is to prevent the kuay teow from breaking up while trying to mix the sauces in it in the wok. I also use oil rendered from beef fat as it brings out more of the beef flavour in the dish. If u don't have that, normal cooking oil will do.......
These are what u need........
Ingredients
Kuay teow for one
2 tablespoons beef oil
150g beef slices
1 tablespoon minced garlic
4 slices ginger
3 teaspoons Oyster sauce
2 teaspoons sesame seed oil
4 teaspoons light soy sauce
2 teaspoons dark soy sauce
1 tablespoon Chinese rice wine
Some bean sprouts
Some spring onions
Some shredded carrots
2 teaspoons corn starch
Method
Make sure u have everything prepared and within reach. This is really fast to cook, so u want to be prepared.
Marinade the beef with 2 teaspoons of oyster sauce, 1 teaspoon light soy sauce, 1 teaspoon dark soy sauce, Chinese wine and sesame seed oil. Mix it all up and add the corn starch
Mix the remaining sauces into the kway teow. This is to prevent it from breaking up if u stir to mix the sauces in the wok. We want nice strands of kway teow, not broken up bits
In a hot wok, put in the beef oil and cook the ginger till fragrant
Add the garlic and cook till almost golden brown
Now it's time to add the hor fun.... Cook it for a minute on high heat
Now add the beef. This takes next to no time at all to be cooked
Time to put in the spring onions and bean sprouts, toss it around for 15secs and it's done!
Plate it and it's ready to serve. A simple, quick to cook and tasty meal for one! Time for me to enjoy this! Try it, you will too!
