CRAB AND LUNCHEON MEAT FRIED RICE




Crab and luncheon meat fried rice......
Fried rice is a no brainer....... Almost everybody loves a good fried rice. You can put almost anything u like in it and it will taste delicious! Or u can use it to clear up leftover protein in the freezer that would otherwise go to waste. A basic fried rice is made up of the following......
Garlic
Protein
Leftover cooked rice
Salt
Fibre
Most of the commercial fried rice will have some kind of vegs in them, but me not being a fan of that, I only used spring onions and corriander leaves in mine. These are the ingredients for fried rice for 2.....
Leftover rice from last night's dinner
Luncheon meat cubed
Peeled crab meat
2 eggs, beaten
1 tablespoon minced garlic
1 teaspoon oyster sauce
1 teaspoon fish sauce
1 teaspoon light soy sauce
Half a teaspoon pepper
Some chopped spring onions
Some corriander leaves
A little oil
Method
Beat up the eggs
Add all the sauces to the rice and mix well
Add the eggs to the rice and mix well
Heat up some oil in a pan and cook the luncheon meat cubed
Add garlic and cook till almost golden
Add the rice mixture and fry till the grains separate
Add the crab meat, pepper and spring onions and 30secs later your fried rice is ready
Garnish with corriander leaves
You can use any meat in the fried rice..... chicken, pork, fishcakes, Chinese sausages, any protein u fancy.... I mix the sauces and eggs before I fry them so as to get each grain of rice coated with egg and the flavors of the sauce to be evenly spread throughout the rice. This way the rice tastes a lot better. The oil I use is pork lard oil..... It gives the dish a slightly more aroma and taste.......
