 BRAISED PORK NOODLES


This is my take on the Signature Pork Rib Noodles at Fun Kee Bamboo Noodles. This is one of the noodle dishes I will always order whenever I'm at that restaurant. It's not too difficult to make. This is the second attempt and I think I got it spot on! The only thing missing is the chilli in the noodles. I used ribs, belly and shoulder of pork in this dish as that's all I have left in the freezer. You can use whatever part of pork u like, but ribs are still the best bet. 


Ingredients 

Wantan noodles for 2

Some pork ribs 

5cm ginger, sliced 

1 tablespoon garlic 

Half a big onion, sliced

1 tablespoon chopped dried orange peel 

1 tablespoon sugar 

1 tablespoon black bean paste

1 tablespoon oyster sauce 

1 tablespoon light soy sauce 

1 tablespoon sesame seed oil 

1 tablespoon Chinese rice wine 

2 big bowls water 

1 tablespoon corn starch

A few dashes of pepper 

Some spring onions

1 egg 


Method 


Marinade the pork with all the sauces, sesame oil, Chinese wine, sugar and pepper, black bean paste, garlic, onions, ginger and dried orange peel



Loosen the noodles 

In a hot wok add some oil, fry the noodles till crispy and put it aside 




In a pot with some oil cook the pork with the marinade till aromatic, add 2 bowls of water and let it boil down to one bowl. Now's the time to taste it and adjust the taste accordingly








Once you're happy with the taste, dilute the corn flour with some water, add it to the gravy

Lightly beat one egg. When the gravy thickens, turn off the flame, pour in the egg while stiring slowly, add the spring onions, pour it over the noodles and it's ready to be served!





Man! that was a really good dinner. It took some time to get the pork tender but it was worth the wait! This is one dish I won't hesitate to make again! Try it! You will agree too!
