Another fridge clearing breakfast..... All the food groups are there, including sambal balachan. Yes, sambal balachan is a food group on its own for Peranakans!😜😜😜 There is no right or wrong way to do this.... If u don't have dried prawns, use ikan bilis..... If u don't have fishcake, u can use chicken or pork slices.... U can use whatever leftover vegs in the fridge for this too! What I used is listed below.... This makes a meal for 2......


2 pcs instant mee hoon, soaked
1 tablespoon minced garlic
2 tablespoons dried prawns, soaked and minced
3 teaspoons light soy sauce
3 teaspoons fish sauce
2 eggs
1 whole fishcake, cut in strips
Shredded carrots
Shredded onions
Shredded chilli's
Spring onions
Bean sprouts
Corriander leaves
Method

I usually soak the bee hoon in boiling water for about a minute. If the bee hoon is a little harger than al dente, that would be just right. Never oversoak the bee hoon as it will be too soft and will easily break up when frying. When it's done, run it under cold water so it won't stick together

Add all the sauces to the bee hoon and mix it properly. this is one of the ways to ensure the bee hoon will not break up when frying
Beat the eggs, fry and cut it to shreds
In a hot wok, add some oil, garlic and dried shrimps, cook until aromatic
Put in the fishcake and bee hoon, cook it for about 2 mins
Add the spring onions, chilli, carrot, onion and bean sprouts and 2 mins later, it's ready
Garnish with corriander leaves, fried shallots and sambal balachan
This makes a seriously yummy breakfast, one that makes u look forward to waking up in the morning for!
