Kari Ah Beng..... So easy to make even my wife can do this! Good for clearing up all the leftover meat in the freezer..... U can use any meat, in this case I used cocktail sausages, luncheon meat and off cuts of pork belly left over from making char siu.... Feel free to use whatever u have, there is no right or wrong way to do this......
The recipe is as follows......
Some pork belly
Some cocktail sausages
Some luncheon meat
Some potatoes
Some curry leaves
A cinnamon stick
3 star anise
5pcs cloves
A1 chicken curry paste
Any bottled prawn or anchovies sambal
Coconut milk
Oil
Method
Put some oil in a pot and sear the pork belly till slightly brown
Add curry leaves, cinnamon stick, star anise, cloves and potato, cook till fragrant
Put in the curry paste and saute till fragrant
Add water and coconut milk and leave it to simmer till the pork belly is soft
Add cooked luncheon meat and cocktail sausages, let it boil till the sausages are cooked, garnish with coriander leaves and it's ready to serve!
Easy peasy, right? The leftovers can be used to make curry mee, eaten with toasted french loaves for breakfast, or with roti canai, like what I had earlier.
Don't worry if the protein in the curry is gone and there are still extra gravy, because u can just about throw any meat in it and it will taste even better!
