Moo Ping

  MOO PING  Usually made of pork collar, I used a deboned quarter chicken thigh to make this as my helper don't eat pork. Still tastes good though..... Went well with the Pineapple Fried Rice and that was my Thai inspired dinner.....  Ingredients 1. One deboned chicken thigh, cut to strips 2. One coriander root with the stems 3. 2 tablespoon oyster sauce 3. 2 tablespoon light soy sauce 4. 2 tablespoon dark soy sauce 5. 50ml coconut milk 6. 3 tablespoons sugar 7. 4 bamboo skewers, soaked for 5hrs 8. 5 pieces garlic 9. 2 teaspoons white pepper Method 1. Pound all the dry ingredients 2. Add all the wet ingredients  3. Marinade the chicken for at least 3hrs 4. Skewer the chicken  5. Put it in an oven at 250°C for 20mins 6. Turn it around and give it another 10mins or till it's slightly charred and it's done Quite simple to make, and good for dinner too! Enjoy, everyone, and stay safe!

BEEF CHOW MIEN

  BEEF CHOW MIEN  This is my take on the American Chinese chow mein. I used whatever I had in the fridge and from my small garden to make this. A really simple and hearty meal, fast to cook, tasty too! Marinade the beef a day in advance and you will be rewarded with a deep and flavorful beef slices. You can marinade a whole lot and freeze them portion sized. Beef marinaded this way is good for stir frys too!  Ingredients 150g sliced beef  Oyster sauce  Sesame oil  Chinese rice wine  Chinese five spice powder  Corn flour  Sugar  Light soy sauce  2 portions Wantan noodles, blanched,  Bean sprouts  2cm knob of ginger, sliced 5 cloves garlic, minced,  1 big onion, sliced, Pork lard, optional  Method  Marinade the beef overnight with a tablespoon oyster sauce, sesame seed oil, corn flour, Chinese rice wine 2 teaspoons sugar, chinese five spice powder and corn flour. HARD BOILED EGG SANDWICH

  HARD BOILED EGG SANDWICH Made from leftovers in the fridge, this recipe will amp up your hard boiled egg sandwich game! The prawns were from my wanton making, the spring onions from my backyard, the bread was from my Kaya toast breakfast and everything else can be found in the fridge or in my kitchen. U can just as easily buy all the ingredients and it'll be gone in a flash as this is one sandwich that won't last very long on the breakfast table! Ingredients 3 hard boiled eggs   Butter equivalent to the size of an egg  Boiled shrimps, cut to small pieces  One onion, cut to small pieces  Spring onions, cut to small pieces  Bread, toasted  Japanese mayonnaise Method Mash the eggs and add everything together. Stir it to mix well, spread it on the bread and cut to size. Easy peasy, right?😜😜😜 Now, that was one really good breakfast! Definitely better than the standard hard boiled egg sandwich! Try it! CHICKEN RICE BALLS

  CHICKEN RICE BALLS  Inspired by that video that was shot on an iPhone featuring my sister, and not having chicken rice in ages, I decided to make that for today's dinner. If u follow all the steps, you'll be rewarded with chicken rice you won't soon forget. Normal chicken rice balls uses a mixture of jasmine and pulut, but since I have calrose rice, and it's sticky enough, I used it. These are what u need...... Ingredients  2 chicken thighs, deboned  4 red chillies  150g ginger  10 cloves garlic  1 whole garlic, sliced into two  Pandan leaves Some spring onions, some corriander leaves  Chicken stock  4 tablespoons lime juice  4 tablespoons white vinegar  Sesame oil  Soy sauce  Salt Water  To make the chilli sauce..... Cut up half the ginger, all the chilli and 5 cloves of garlic and put it in a blender with the lime juice, vinegar one tablespoon chicken stock and half teaspoon of salt. BEER BATTERED FISH

  BEER BATTERED FISH   These are the only two pics I have...... Didn't expect the fish to turn out this good! Nice and crispy batter, well cooked fish, what else can one ask for?! Just look at that! The batter's perfect! I used a combination of the western and asian techniques, which is, cold beer batter and double frying the fish. This results in a light and crispy batter and a fish cooked to perfection! The beer needs to be ice cold. Leave the can in the freezer till ice crystals form in the beer. The next thing to prepare is the oil. Keep it really hot and reduce the heat to low heat. Everything needs to be done real quick as u want the batter to be as cold as possible when it hits the oil. So u need to prepare the oil, prepare the fish and lastly the batter. The ingredients are simple. These are all u need. Ingredients  Fish, cut to size. I used a tilapia fillet. U can use any fish u like.  4 heaped tablespoons of wheat flour  4 heaped tablespoons of rice flour  1 teaspoon

SAYUR LODEH

  SAYUR LODEH  This is another of those "clear my fridge" dish that tastes excellent! Whatever vegs u have, fishballs, fishcakes or toufu, u can chuck everything in and in a couple of minutes u have a one pot dish that all will love. If u have ketupat or nasi impit, some dried desiccated coconut and sambal lying around, this would make a bloody good lontong! Just had this for dinner and since this is the season of Lent, it's also a Lent-friendly meal too!  Ingredients 2 teaspoons tumeric powder  Half a garlic, minced  1 inch galangal, minced  8 shallots, minced  250ml coconut milk  Two tablespoons granulated balachan 5pcs candlenuts  1 stalk lemongrass, bruised Cabbage, brinjal, chili, long beans all cut to size  1 tow Kwa deep fried and cut to size  Some fishballs, fish cake and crab sticks  Two litres of water  Salt to taste Method  Blend the onions, garlic, candlenuts, belachan and tumeric powder into a paste and sautee it till it's fragrant  Add water and all the

  FISH SOUP  Lately it's been raining so much flash floods appeared all over the place. The weather has been really cool these couple of nights and this is the perfect soup for the dinner table. Keeps you warm on the inside, perfect for this kind of weather. Good with rice or rice noodles, it's the perfect dish for tonight's dinner! Ingredients  1 whole garlic, finely chopped and fried till crispy  Some spring onions  Some corriander leaves  250g red snapper fillets, sliced  Some ginger, sliced  Some salted vegs, sliced  1 tomato, quartered  1 teaspoon sugar  1 teaspoon corn flour  1 teaspoon salt  Some Chinese rice wine  4 tablespoons evaporated milk  1 ikan bilis cube  1 tablespoon flounder powder  1.5L water  1.5 tablespoons fish sauce Method  Marinade the fish with salt, 1 tablespoon Chinese rice wine, sugar and corn flour and let it sit for 30mins  With the oil used to fry the garlic, sautee the ginger and the white part of the spring onions till aromatic  Add the toma
